I recently became a vegetarian. I'm from the eggs and dairy environment. I need some recipes that are easy to make, as some healthy meals for breakfast, lunch, dinner, snacks, etc. I need recipes that are, healthy, easy to do when Im a hurry or do not want to take a little time to do, food they are cheap and I can get at Walmart and Kroger, I really do not like squash or brussels sprouts and recipes identification stick to beans green peas, brocli, average sort of fruit like apples and oranges, and

VEGETARIAN LASAGNA 1 clove garlic, 1 package of candy. 1 package spinach frozen. 1 package lasagna noodles. (Pint, sm. One) low fat cottage cheese 1 jar meatless sauce 1 sm favorites. pkg. Light mozzarella cheese, tomatoes, salt and allspice Several Parsley flakes Defrost spinach, drain all the water with a strainer as possible. Cut eggplant in rounds thinly sliced, put on paper towel and a little salt, put another paper towel on top and continue with layers of eggplant rounds, salt, paper towel etc. Place a heavy pan on a baking tray on top of the stack, let sit for at least 1 / 2 hour to 2 hours. Cook lasagna noodles until tender. Mix cottage cheese with spinach in a bowl, salt and pepper and season to taste. In a casserole pan, spread a thin layer of sauce. Add layer of pasta, layer eggplant, sauce, cottage cheese layer, mix spinach, another layer of noodles and repeat the process until the pan is full or desired height. Top with remaining Mozzarella cheese, tomato sauce and cover evenly with thinly sliced peeled tomatoes. Sprinkle parsley. Bake at 350 degrees for 45-60 minutes, until eggplant is soft and brown color has changed.
