Any suggestions for a good vegetarian cookbook?

I'm a vegetarian who is running without a prescription. I have a good cookbook, but all it takes much time to prepare. I'm in college and have no much time to cook. Any suggestions?

Super Natural Cooking by Heidi Swanson is very good for the use of unusual ingredients and to unusual terrestrial foods. Vegan with a Vengeance is very good. I borrowed it from the library, but buy it. vegweb.com is also a great recipe resource.

My first vegan, semi-raw cookbook

I picked this up when I was a young wife and mother. My husband was just getting out of law school at the time, and a cookbook of this size was a big investment for us. But it was worth it, and I've kept it with me all these years.She uses the word "vegan" once, but that's what it is. She leaves open the possibility that her readers might use dairy and assures them that the recipes will still taste good, but most won't want to after they see how easy it is to substitute for it.This was published under the Fit For Life auspices, and as such there's some talk about food combining. However, it's much less of an issue here because there isn't animal protein to have to worry about. The big food scheduling issue seems to be around fruit, however. It's hard not to want to eat her recipes for dessert as well as breakfast. I had never before seen so many luscious recipes for fruit juices, salads, smoothies or fruit- and nut-based granola. Seriously, someone could live on fruit for a month with this and not feel deprived.Before the concept of "raw" food became popular, the Diamonds were touting the importance of "live foods". Not only is the fruit, for the most part, uncooked, but there are myriad recipes for delicious fruits and salads. This is not a book for a purist, though, as she combines- *gasp*- cooked and raw vegetables in mouth-watering recipes.I'd never seen so many recipes for almonds, tahini and dates before, but since then they've become an important part of my kitchen. She also has a bunch of recipes for tofu in her "stedda" section. That's going to offend some people today, but I remember the taste of them fondly (I've since developed an intolerance to soy). Even if you have the same problem, the flavor combinations themselves can be inspirational.Recommended for vegans who like gimmick-free good food.


Great Purchase

My husband and I are trying to live a "Fit for Life" lifestyle, and wanted to expand our recipe repertiore, so we bought this book. This book is everything we wanted, with alot of delicious recipes for eating properly combined. The salad dressing recipes really make salads pop with flavor and are fast and easy to use.The shepards pie is one of our favorites and we never miss having any meat in our meals. Our favorite soup is the creamy cauliflower soup. In fact if we finish a meal and still feel hungry, I just whip up a batch of the cauliflower soup for dessert.A difference we noticed is that this book from the "Fit For Life" book is that it uses canned tomatoes instead of always using fresh, but fresh can be substituted if you are uncomfortable with having even minimally cooked tomatoes. Also, instead of using all dried herbs this book includes fresh herbs, which is great since we have an herb garden.I would recommend this book to anyone.

Great Educational Vegetarian Cookbook

I have had this book for over 10 years and purchased one for a gift this past Christmas. It is a great nutritional education book that should be in everyone's kitchen whether you are a vegetarian or not. I do not like to buy prepared foods and this book offers easy, healthy recipes to avoid store bought convenience foods laden with fat and calories. My favorites are the turkey chili, salad dressings, humus, salsas and smoothies. I love this book!

I have several vegetarian cookbooks on my shelf (I'm not a vegetarian) and yet over the years I haven't been moved to prepare most of the recipes -- too many ingredients or too fancy but I remembered how the Fit For Life vegetarian recipes were always good (a little bit of work but they were tasty) so I ordered this book and it is GOOD. Very good.

My Favorite Cookbook!

I bought this book about a year ago when I was feeling stuck on tasty, healthy things to cook for my family during the week. I immediately made several of the recipes, and fell in love with the book. I use this book more than any other cookbook in my collection. At first several of the recipes became some handy go-tos during the week, and now I'm going through the book trying recipes we still haven't tried yet. Only one recipe so far was not given accolades by my husband and daughter- the chilled avocado and cucumber soup, but no matter. Our favorite is probably the creamy tortilla soup both because of the delicious and satisfying taste and the ease of preparing. I noticed the book is actually vegan, and we're not strict vegetarians, so sometimes I make substitutions. I'm really not fond of soy cheese and things like that, so I usually just sub the real thing. I'm definitely looking for another Robin Robertson book for my collection, and I recommend this book to any of my friends looking for tasty, healthy, quick recipes. Love it, love it, love it!


Great Cookbook, Vegan or Not

I highly recommend this cookbook, whether or not you are a vegetarian. My teenage daughter has been a vegetarian for four years and I have been looking for new recipes the whole family can enjoy. The "Quick-Fix" part of the title caught my eye and I have not been disappointed. The recipes are indeed quick, and they are quite tasty, even for those of us who are omnivores. I didn't realize these were vegan recipes at first, but I appreciate that they are easily modified if I choose to use cheese or even occasionally add meat, but honestly, we rarely miss those ingredients. This is a great addition to any cook's library.


Quick meals

This book has been a great help. With my new hours at work, I get home a half-hour later than I used to. I have to make two meals: one for my mom and husband, who are not vegetarians, and one for me. I try to cook meals ahead on weekends, but I don't always have time. The recipes in this book are quick, tasty, and mostly easy to prepare. I'll be turning to this book often for ideas for quick meals to fix in the evening.


Wonderful and Do-able recipes!

I bought several vegetarian cookbooks along with this one, and this book is by far the best. I've found that the recipes truly are simple, and delicious. I've had the book for less than a week, and I've already made two of the recipes, both with rave reviews from my family. Robin Robertson gives some very helpful advice, and offers alternatives for speeding up a recipe when you are really pinched for time. This book has inspired me to expand beyond my "comfort zone" and venture out into some ingredients that I'm not as familiar with preparing myself at home. I'm not a big fan of meat substitutes, and although this book has several recipes that do call for them, the majority of the recipes do not. This was well worth the purchase, and will be a go-to book for years to come in my kitchen.


Easy to prepare, tasty recipes!

I was not expecting too much when I ordered this book, but the reviews were good and I thought it would be worth checking out. I have to say, that everything I made was really flavorful, healthy, and could legitimately be made fast. I don't know much about Asian-inspired cooking so I was particularly in love with the Pho recipe, which I have come to make at once a week when it's cold outside and I need a big bowl of spicy, hot soup. Additionally, often I have a problem with a lot of recipes where I haven't gone to the grocery store ahead of time and I am always missing ingredients. This book often gives substitutes for items you are less likely to have on hand (i.e. using angel hair instead of rice noodles if necessary). Also, I often find that many healthy recipes just aren't that flavorful, and I hate bland food. Everything had big, beautiful flavors and I was surprised at times by how simple recipes could turn out so delicious. Highly recommended!

This is a wonderful little book. I bought it college but didn't use until after I got married and wanted to start cooking. My husband absolutely loves the meals I prepare using this cookbook and they are easy enough that he can make them up too. Plus they are so yummy and really are nutritious meals.I wished I would have used this book in college but I couldn't be bothered when the dollar menu was so effortless. Now the meals in this little book have become a staple of my everyday eating and it really has helped me to eat much much better.Oh yeah, and they really are affordable. I can't say enough good things about this cookbook. Very highly recommended.


Amazing

I became a vegetarian about a year ago, and had some difficulties coming up with stuff I like to eat. I'm the type of person who is very picky about what I eat.With the busy lifestyle I lead, and on a strict budget to adhere to (I'm a college student), I figured buying this book would be well worth a shot. When I received it, I looked at the recipes and they were manageable, not like some of the cookbooks out there that require skills or a lot of ingredients to make. A lot of these recipes are also quick to make. However, the estimated time the book provides per meal is a little off. I'm not an ambitious cook, so I'm not exactly the type of person who can whip things up extremely quick.All in all, I love this book. This is by far the best vegetarian recipe book I've bought so far, and everything is delicious.

I learned alot and I've been cooking for years. Vegan is new to me and I learned so much. These recipes are great and easy. Its basic but not too basic. My 14 yr old truly benefitted from this book. She learned alot and the recipes didnt intimidate her. She is very new to cooking. I checked this out at the library. Its great and I've decided to buy myself a copy.


Just Plain Nasty

When I looked at this book in the bookstore I just looked at the titles of the recipes, all of which sounded really good. For example the Pad Thia and Pasta with Greens. The sauce for the Pad Thia was disgusting, it contained ketchup, soy sauce, and sugar to name a few items. Not at all authentic or palatable. The pasta with greens sounded good but it calls for a creamy sauce made from cottage cheese, tossed with pasta and kale. I think the goal of this book was to create recipes that included easy to find and inexpensive items, but the result was not a success.

Meh. There are better vegan cookbooks out there

I've been a vegan for almost 10 years now, and I love spicy food whether it is a fiery pa-nang curry or a flavorful boraccha sauce. I bought this book thinking I'd find some great, spicy, innovative recipes to try.What I found instead was that the author was very timid in using actual heat and spice, and started every recipe with the disclaimer, "If you want it more mild, leave out the chilies".If you don't want to eat spicy food, you should choose a cookbook that doesn't focus on such flavours. There is a lot of repetition in ingredients, and to be quite honest many of the recipes were downright bland.I ended up giving my copy away.I'll be sticking to proven authors such as Isa Chandra Moskowitz/Terry Hope Romero, Nava Atlas, and Lauren Ulm (Vegan Yum Yum), whose food splattered tomes are a testament to creative, reliable recipes.


Good & easy vegan cooking

After purchasing several vegetarian cook books and trying a number of their recipes this book stands out for excellent tasty dishes that are quick and easy to prepare. The amazing variety of international dishes provides a wide range of different foods that are always interesting and exciting. The spice (hotness) can be adjusted to a range of tastes and I do just that for different guests. I have cooked many recipes from this book for various guests and in all cases received very positive reviews. She offers good substitutes for the more difficult to find ingredients that always work well. Robin Robertson has published a number of vegan cookbooks and I have several of them which are all excellent, but if I have to have just one this is my choice due to its simplicity of preparation and top flavors. I have given copies of this book to friends interested in vegan cooking and everyone has been very happy with their results.


Excellent addition to vegetarian cooking library

This is an excellent cookbook with many delicious and easy to follow recipes. I love spicy food, and Vegan Fire and Spice certainly lives up to its name. In my experience, many cookbooks skimp on spices, but not this one. Even if you are used to automatically doubling or tripling the amount of spice in a recipe, do not do it with this book without first sampling the dish, because she doesn't mess around with heat.


But don't get too fancy with the recipes

What does that mean?Basically, first time through, follow the directions. If she asks for two cans of beans, use two cans of beans. Don't go to all the trouble to cook the beans (and then feel that you have to add the broth). It probably won't work. If she asks for collard greens, find them, don't use frozen mustard greens.That done, the horrible mess that I made of the black-eyed peas and collard greens turned out great the second time. And, come to think of it, the third too.I've been playing with the African recipes. They are nice. But I really need to measure things more, peanut butter, for instance in one of those stews.

I checked this out from the library to try it and I could not have been happier. I made over 20 dishes from the book and all were fabulous and easy. Who would have though Italian could be so easy. The dishes are low cost to make and filled with fresh ingredients. My only complaint, there should be more photo's. I am buying it and will buy the next book from this author.

Can't recommend highly enough for vegetarians and non-vegetarians alike. I just made his ricotta-basil tart recipe, and it's just about the best thing in the world -- good hot, good cold, savory, with a little honey drizzled... okay, yeah, I drooled a little on my computer. Seriously -- the best thing about Italian cooking are fresh, simple ingredients combined in wonderful ways. His recipes are easy to follow, I have NEVER made better tart crusts than when I follow his steps, and the flavors do not disappoint.


Yummy

Although I don't eat much cheese, I just made the italian shells and cheese from pg. 116. It was really easy even though I substituted the heavy cream with homemade cream made from rice milk, cashews and almonds. Didn't have the right cheese so I used white cheddar and only had whole wheat shells. It was great. I like the ease of the recipes and the recommendations for side dishes to go along side the main dish. It does have a few pictures, but not many.

I bought this about 10 years ago on a whim at the bookstore and it has been my "go to" cookbook ever since. I have yet to make a bad meal from any recipe in this cookbook. My husband is not a veggi like me but loves everything I have whipped up for dinner from this book. We have been married 5 years so he has tasted a lot of the recipes. Everything is wonderfull and most are pretty simple. Even the baked chickpeas are divine and they have a total of 4 ingredients! We now have a baby and I am still able to make dinner from this book, most recipes are not overly time consuming. SOOOO TASTEY!! best cookbook I have by a long shot!


Not for vegans!

I have tried many recipes in this book and I have not found a single one that I will make again. In all cases the taste was extremely bland. This is surprising in view of the overwhelmingly positive reviews on Amazon. I believe one reason is that I only make vegan food, and therefore has to limit my choice to the few recipes without cheese/butter, or skip the cheese/butter. The problem seems to be that the recipes are too simple. Compared with Madison's cookbook Vegetarian Cooking for Everyone, which is THE cookbook for vegetarians, the reciepes are definitely simpler (fewer ingredients, fewer steps in the preparation). That makes them easy to make but the resulting taste is just bland. But why waste life making boring food? Good vegetarian cooking is complex.Unfortunately, I have not found any good vegan italian cookbook. In fact the best vegan italian recipes I have found in Essentials of Classic Italian Cooking, although this is not even a vegetarian cookbook.

Great book even if you're not vegetarian

I bought this book as I am trying to get my family towards a more plant-based diet, though we do still eat meat. I love the easy-to-read format. There are lots of useful suggestions in this book besides the recipes. I have tried several of the recipes with good results. But I think the price of this book is worth it just for the guilt-free chocolate brownie cake. Yum, yum, oh my!


EXCELLENT FOOD!

This is a great cookbook with delicious food! I bought this for me--(I want to do more meatless)--and for a friend who is a brand new vegetarian.I have made over 20 recipes from this book and all but one have been 10 on a scale of 10--REALLY DELICIOUS!!The food is EXCELLENT!!Recommended for anyone who wants GREAT food, whether they are vegetarian or not.

Top 3 Cookbook ever - really great stuff!

I absolutely love this cookbook. I've tried a few recipes now and I, a lacto-ovo vegetarian, and my husband, an omnivore, both love everything we've had. The pictures are gorgeous, the directions are simply stated, and there's lots of good general advice, sample meal plans for veggies and vegans, etc. And, there are plenty of recipes that aren't just salads (I hate when vegetarian has to mean just greens). My first week I've lost four pounds, and I'm looking forward to trying the rest of the recipes and getting healthier!I whole-heartedly recommend trying this book. The only warning is that there are a few hard-to-find ingredients (e.g. kecap manis (which I got on Amazon), and Stone-ground whole-wheat self-rising flour (I found stone-ground whole-wheat flour and added baking powder per an internet recipe)).A big thank you to these authors! :)


TOO many Carbs

Some of the meals look interesting in the picture - however - the carbs and Cal. are off the scale. Also found too many dishes using eggs. Being Diabetic as well as Vegetarian - these meals just do not work for me.

I was flipping through the book and came right to a recipe that calls for gelatin, with absolutely no mention as to replacements that could be used instead. Knowing that gelatin is not vegetarian, it makes me sort of question if these authors know what they are talking about through the rest of the material.I also don't like that the photographs of the prepared recipes do not say on them (or anywhere near them) what the recipe is or on which page to find it. It makes it incredibly difficult to use this cookbook.On the other hand, there are a few really good recipes in here.

My mom bought this book for me when I became vegetarian. I have to say that as a college student who works two jobs and has a tight budget, this cookbook is a goldmine! Every recipe is easy to do and the ingredients are easy to substitute for vegan meals. I love this book. The chapter devisions (bfast, lunch, dunner ect) make it SO easy to find a meal to eat or a dish for a get together. My roommate often used this book as well! LOVE it and cannot stress how awesome this book is for new vegs or those of us on a time and budget limit!

Too much tofu

I returned this cookbook after looking through it. I'd been hoping for recipes that use combinations of natural ingredients to make a complete protein, such as corn and beans. I do not cook with tempeh or tofu; I use milk, eggs, and butter, but am leaning towards a vegetarian, not vegan diet. My favorite meatless cookbook is Meatless Meals in Twenty Minutes by Karen Levin.

Ok if you're not a beginner

The only problem I had with this book was the cooking skill level and the time it took to make the meals. I'm not that great of a cook and I work a lot of hours. This book does have a lot of info about cooking different ingredients which I found usefull. If I have more time I would definitely learn a lot from this book.

I don't know what I'd do without this cookbook

Honestly, this cookbook has made it possible for me and my family to take a good shot at a vegetarian diet. During my third pregnancy I was amazed at how motivated I was to eat vegetarian. I was raised eating meat with lunch and dinner every day and really felt like it was a necessity to keep my blood sugar in check, particularly during pregnancy. I saw this cookbook on the shelves at my midwives practice during my fourth (and last) pregnancy and decided to give it a try and I've been converted. I am truly satisfied eating vegetarian.I think the information in this book re: pregnancy and lactation is very thorough and instructive. If I'd had the book during my first pregnancy I would have probably memorized every word. By the time I got it though I was on the tail-end of my last pregnancy and have therefore not applied some of the tips that are recommended to address nausea, exhaustion, etc.In any event, the most convincing endorsement of this book would come from my kids, ages 7, 5, 3 and 1, if I allowed them on the computer. :) They LOVE nearly everything I've made from this cookbook. Favorites include: Potato-Kale Quiche, Tamale Pie, Tofu Pot Pie, Shepherd's Pie, Brown-Rice Asparagus Quiche, Butternut Squash Lasagna, Rice and Greens Casserole, Tomato Chickpea Pasta, Sesame Molasses Cookies, Cranberry Orange Muffins, Banana Molasses Muffins. And I love the Hummus when made in my Vita Mix. I use the Bean / Legumes Cooking Chart to prepare dried beans in the CrockPot and they come out perfectly every time. It's so much cheaper and SO much less waste than using can after can of prepared beans.In short, I am so thankful for this cookbook. This is the first review I've ever been inspired to write. Great Book For Everyone

I really love this cookbook and I am not vegetarian or a mother (still working on that). I consider myself a flexitarian so I value good and wholesome vegetarian food. This book delivered!!! I loved the way she explains the importance of good nutrition and vitamins during pregnancy. She also includes the nutritional benefits that you are recieving from each recipe. I also liked how she grouped the helpful recipes to make for pre-conception (that's me), pregnancy, and post-partum. It was so handy to have when I cooked for my vegetarian friend that came home from the hospital when she had her new baby. I made the fabulous butternut squash lasagna which is recommended for the post-partum mom to help her heal because of its high nutritional content. They really loved it. This will be a cookbook I turn to for years to come and especially when I am pregant to produce a well nourished baby.


Delicious comfort food for everyone

You don't have to be vegetarian or a mother to love the recipes in this cookbook. While it does have some great information about nutrition for mothers and families, I use it for the amazing recipes. I grew up with Midwestern comfort food like macaroni & cheese, pancakes, and pot pies, and the recipes in this book help us make the most "true to memory" versions of each of them.This has become the go-to cookbook for my family, whether we've made a particular recipe or not. Even the ones that seem to have weird ingredients turn out great, like the awesome pot pie that tastes better than any restaurant makes. I can't recommend it highly enough.

LOVE this book

I wish I'd known of this book when I was pregnant. I checked it out of the library when I was looking for interesting recipes to feed my 2 year old son...I renewed it as many times as I could, then checked it out again...finally I bought the book!It really is great. We don't eat soy or seitan anymore but there are still plenty of great recipes. The recipes are just simple, comforting, yummy food--great for a toddler. My son and I just made the Everything Cookies this afternoon--I love them because they are not too sweet. We added pumpkin seeds and flax seeds to the dough and UMMMMM!
