Vacation time at school is usually rest and relaxation time for the kids and I, but the food and nutrition of children ever takes a back seat in my kitchen. I make sure always healthy and enjoyable - snacks.

I realized that vacation time also meant snacks more lat night as they allow children to feel a little "night life" (at home, of course). We do a little night television watching, and / or play Scrabble or board games. Usually we prepare a little something for them so they can sleep in the mornings, but not enough to completely give up breakfast.

A mutual is my favorite frozen banana shake.

Land put a cup of soy milk and 1 cup frozen banana chunks into a blender, blend until smooth. I vary this sometimes with a bit of chocolate or strawberry syrup to taste, but it works quite clear to them too. I use soy milk because it is more fattening healthy and less than regular cow's milk. Do not complain so maybe they do not know the difference yet. And usually prepare the bananas ahead of time by cutting them into pieces and freeze in a zip lock bag, at least 8 hours. (In my case, does not last more than a week but you can actually freeze and store the bananas to a month.)

I also have a hand-me-down recipe that is a little vegan approach (again, less fattening, since we are talking about a late night snack in which there may Unlike his record calories if you are awake and active).

I make chocolate oatmeal cookies mix the dry ingredients (pre-filter 1 ½ cups unbleached wheat flour, a cup of sugar, one teaspoon cinnamon, ½ tsp salt and ¾ teaspoon baking soda) in a bowl. In a different bowl, mixture of ¾ cup canola oil (vegetable oil will do, but is much healthier than canola) and ¼ cup of soy milk (healthier and again, my children will not know the difference). Pour the liquid mixture to dry mixture and mix well. In a separate bowl, mix 1 ¼ cups uncooked oatmeal old, ¾ cup of raisins and a cup of chocolate chips, then add to the mixture. Stir well. Pour mixture over the dough a greased baking tray and flatten the dollops with the back of a spoon. (There should be at least ½ inch between the cookies.) Bake for 10 to 12 minutes or until tops and bottoms are lightly brown.

To accomplish this, add a glass of milk for each child. That usually puts in a drowsy state within minutes. These two recipes are an essential part my children's lives. And that leaves me as a happy mother - I did my part, my way.
